A bottle of Chianti and my wife's special spaghetti was big eating for poor graduate students in the 1960s. Our group had gathered in our tiny apartment to celebrate another win of the Ohio State football team, and my wife Sandi had fixed her family's secret spaghetti sauce recipe.

Being a farm boy of German-Irish, "meat-and-potato" ancestry, I viewed spaghetti as pretty fancy and exotic fare. The sauce tasted very good but in my humble opinion it had a fatal flaw. In scientific terms, it suffered from "syneresis" or, in everyday language, it "weeped." Liquid separated from the tomato pulp and little red rivers ran and collected at the bottom and sides of the plate. So, I left the table, went to the sink, and drained off the free liquid, trying not to dump the whole plate of pasta and sauce into the sink.
